Bianchetto — Spring Truffle

Tuber borchii

CHARACTER

Tuber borchii is often called the poor man’s white truffle — but this misses the point entirely. It is sharper, more pungent, with a pronounced garlicky edge that makes it ideal for certain preparations where the magnatum would be too delicate. Found in late winter and early spring, it keeps the truffle season alive when little else does.

Aroma profile

Sharp and pungent: roasted garlic, white pepper, a yeasty fermented note. Distinctive and polarising — those who love it, love it intensely.
