January – March
Winter Black Truffle
Tuber brumale
CHARACTER
Tuber brumale occupies a precise niche: it is found in the coldest months of winter, at the same time as the black Périgord, and is often confused with it by the untrained eye. Its aroma is distinctive though — camphor, violet, a cold forest floor. It is the truffle of January mornings in Piedmont, when the ground is hard and the air cuts clean.
Aroma profile
Cold and mineral: camphor, violet, wet stone, forest floor in January. Less rich than melanosporum but with a sharp, distinctive edge that some chefs prefer.
